Torta Di Pasqua (Italian Easter Pie)

1/2 lb. Italian Sausage links, thinly sliced (or hot or mild bulk sausage)
3 eggs
1-1/2 lbs. ricotta cheese
8-10 slices prosciutto ham, coarsely chopped (or chopped, baked or boiled ham)
1/2 lb. Mozzarella cheese
1 cup freshly grated Parmesan cheese
2 Tbsp. finely chopped fresh parsley
1 tsp. dried oregano
Freshly ground pepper
Salt

Preheat oven to 350 degrees. Butter a 7 x 11" baking dish, a 10"
quiche dish or a 10" pie plate. Brown sausage in medium-size
skillet over medium heat; drain.

Beat eggs into ricotta cheese in large bowl. Add sausage, ham,
mozzarella, Parmesan, parsley and oregano. Season with salt and
pepper. Spread mixture in prepared baking dish. Bake at 350
degrees for 40-45 minutes or until top is lightly browned. Cut
into squares or wedges.

Serves: 8-10
