Italian Easter Pie
2 c. flour
1 tsp. salt
2/3 c. lard
4 tbsp. water
1 lb. Ricotta cheese
1 lg. egg
2 hard boiled eggs, chopped
1/4 lb. hard salami, chopped
1/4 lb. Mozzarella cheese, shredded
1/4 tsp. salt
1/4 tsp. pepper
Sift flour and salt into bowl. Cut in lard with a pie blender or
two knives, until coarse. Add water, one tablespoon at a time.
Mix lightly to form a ball. Divide the ball in half, roll out one
half and place in a pie plate. Mix Ricotta, 1 egg, 2 hard boiled
eggs, chopped, salami, Mozzarella, salt and pepper. Put on dough
covered bottom of pie plate. Roll out other half of pie crust.
Put on top and seal. Gash top. Bake at 350 degrees for 1 hour.
